Cream of Broccoli Soup

When broccoli goes on BOGO sale at the local supermarket, it's the perfect time to make Cream of Broccoli Soup.
Of course you'll need some butter, plenty of fresh broccoli, some garlic, a giant onion, and a tough guy armed with a potato peeler to help prepare it.

"Peeling onions is a tough job but somebody's gotta do it...."

Throw it all in a big pot until the onions are soft, add vegetable stock, and some freshly ground pepper and simmer until done.

Then into the blender until the mixture resembles green goo (YUCK! reminds me of goose poop, but much better tasting of course) and serve diluted with milk or light cream, with a generous dollop of sour cream stirred into the middle.

Callum loved it! Especially with slices of french bread to dip.

    Little guys can really occupy ones time but oh so worthwhile.

  3. I love your description of the soup. I was at a restaurant in St. Louis once where they made guacamole fresh at the table. One of the girls remarked that guacamole reminded her of something similar to what you mentioned. I won't name it here.

    I never have like avocados, but after her remark, I surely won't eat them.

  4. Better tasting than goose poop? Perhaps, but can you use it to prop photo equipment in the park?

  5. what else is very good, and similar, is cream of zucchini soup...chop up one zucchini or more, plus 4 or 5 garlic cloves, simmer in broth till soft, then BLEND and add cream or milk to taste...ditto salt & pepper. YUM

  8. oh my oh my, drooling over here! One of my very favorite soups! Jimmy hates broccoli so i've never made it. He needs to take a lesson from Callum!

  13. I have not made that soup for a while but it is good. I also make the cream of cauliflower soup – cauliflower pieces with 1 onion then blend with a can of cream of potato soup, add milk or cream, a bit of nutmeg and sprinkle with swiss cheese. I lile your helper – he looks eager. I have to be careful when posting this as I see my last comment never made it somehow. I guess I misread the word verification.

    I cannot believe he is almost two years old. He lloks so cute and grown-up, too.....I remember waiting for him to be born...! And now, you have a very efficient helper in the Kitchen....Will Wonders Never Cease! (lol)

    Broccoli soups sounds delicious, until you mentioned goose poop. That did it! Don't know if I'll make any soup. LOL!

    Honestly, this is the first time I've seen (or heard) of anyone making Cream of Broccoli from scratch.

  25. I once ordered a mushroom soup in a pricey restaurant. it looked like .... well loose doody. It was too pricey not to eat--and it tasted fine--but it looked awful.
